Each piece is rolled by hand and sits in a paper cup, ten to a box. Sweet enough for a nine-year-old, dark enough for the adult who packed the tiffin.

There is no preservative in the recipe, so the batch size is the shelf life. We roll a hundred boxes at a time and ship the same week — nothing sits in a warehouse waiting for a purchase order.
